Chicken Tortilla Rice Soup
1. Prepare rice according to package directions and set aside.
2. Cook onions in Dutch oven or large saucepan coated with cooking spray or oil over medium-high heat, until tender.
3. Add broth, cooked rice, tomatoes, chicken, and chilies.
4. Reduce heat; cover and simmer for 20 minutes. Add lime juice. Just before serving, pour into soup bowls, top with tortilla strips and avocado. Garnish with lime slices and cilantro.
